How to measure high-gluten flour

The chart entry is “High-Gluten Flour, 1 cup = 4 1/4 oz = 120 g”. The extra protein does not show up on the scale: bread flour, all-purpose flour, unbleached cake flour and even buckwheat flour all sit at 120 grams per cup on the same chart. Spoon the flour in and level it, because a cup dipped into the bag packs more. That gives 60 grams for half a cup, 30 grams for a quarter cup and 7.5 grams for a tablespoon. Durum flour is slightly heavier at 124 grams and whole wheat flour lighter at 113 grams.

Sources: 120 grams per US cup is the weight per cup in King Arthur Baking’s ingredient weight chart (open the chart), entry “High-Gluten Flour, 1 cup = 4 1/4 oz = 120 g”. A US cup is about 237 milliliters.
