How to measure cake flour

Many cake recipes ask for sifted cake flour. Sift first, then spoon the flour into the cup and level it. If you sift after measuring, you have measured unsifted flour and will use more than the recipe intended. The low protein content is what gives layer cakes their soft, tender crumb.
