How to measure heavy cream
Fat is lighter than water, so the extra fat in cream keeps its weight close to that of milk. Measure cream before you whip it: whipped cream roughly doubles in volume, so a recipe that asks for 1 cup of whipped cream needs only about half a cup of liquid cream.
